How the dinner is built

The Dixie II dinner is a set menu in three courses: a starter, a main course you choose, and a dessert. You do not order from a long list on the night. Instead the operator asks you to contact it at least 24 hours before the cruise and say which main you want, so the dinner can be planned. The menu below is the resort's 2026 dinner menu. Dishes and sides can change with the season, so treat it as a guide to the style of the meal rather than a promise.

The starter

The meal opens with freshly baked rolls and butter, followed by a baby-lettuce salad. The salad comes with fresh mozzarella, red tomatoes, a balsamic vinaigrette and a drizzle of balsamic glaze. It is a simple, familiar start, and it is the same for everyone at the table, so there is nothing to decide here. If anyone in your party avoids dairy, raise it when you confirm your main, because the mozzarella is part of the salad.

The four mains

You pick one of four. The cowboy ribeye is a 12-ounce steak served with roasted garlic and leek mashed potatoes, steamed broccolini and a peppercorn sauce. The salmon is pan-seared and drizzled with a citronette, and it comes with creamy polenta and broccolini. The chicken is a bone-in breast, pan-seared, with the same mashed potatoes, broccolini and a southwest chimichurri. The fourth is a wild mushroom ragout on creamy polenta with broccolini and roasted red peppers, topped with aged asiago.

Which main suits whom

The mushroom ragout is the only main without meat or fish, so it is the pick for vegetarians, though the asiago on top is a cheese, so it is not for vegans. The ribeye is the biggest plate on the menu at 12 ounces, and the salmon and the chicken both come with sauces rather than gravy. The chicken is the easiest choice if your table is mixed and nobody wants to be adventurous. Guests have written that the food is good and that a steak once arrived overcooked, so if you care about doneness, mention it to the server when the plates come.

Dessert

Dessert is a New York cheesecake with a fresh berry sauce. It arrives after the main course and is the same for everyone at the table, which keeps the end of the evening simple. You do not order it separately. Coffee and tea are part of the ticket, so you can have one with the cheesecake at no extra charge. If you would rather finish with something stronger, the bar is open all evening, and you pay for those drinks separately.

Drinks and paying on board

The ticket includes soft drinks, coffee and tea. Signature cocktails and wine are for sale at a full bar on the boat, and the 2026 menu notes that on-board purchases are by credit or debit card only, with an automatic gratuity on bigger groups. That means a table of friends who plan to drink should bring cards instead of counting on cash. Alcohol is the one cost most guests do not plan for, so decide beforehand how much you want.

Allergies and dietary needs

The booking page names four mains. If someone has an allergy, a gluten or dairy restriction or another dietary rule, contact the operator in the same message in which you choose your main, and do it well before the 24-hour deadline. That gives the kitchen the longest time to answer. Do not wait until you are at the dock, because the choice has to be made at least a day before the cruise. Tell the operator how many in your party are vegetarian, too, so the right number of mushroom plates is ready.
